* * * In order to remain at the best level of Quality, we keep tasting and tasting the whole year long... This climax of this Quest being in February/March, for the yearly Grand re-organization of our Wine List. For 2 weeks, we taste dozens of samples for news wines to enter the list, or for the "next vintage" to replace a wine. We are willing the conditions of our tasting to be as strict as possible: - First of all, meet the makers at the "Domaine" (winery), to catch the atmosphere of the place, and the vintage. After tasting at the maker's place, we always bring back new samples to our premices, that we always taste the same way: - Gathering the same Appellations in a sort of a Contest, to draw the best Wine of each Village. - Tasting over 3 days of every single sample
which was selected. There are two reasons for that. The first is to
cancel the influence of the wines on the other, by changing the order.
And the 3 days period enables us to test how a wine rects to oxygen,
which is, at a smaller scale revealing how a wine will grow. |
